How did the history of Xiajin Zhenzhu Qi come about
According to historical records, Emperor Qianlong visited Jiangnan six times. Once, during a southern tour, Qian Jiang returned to the capital via the canal waterway. Due to the exhaustion of the journey and the lack of suitable environment, his appetite was stimulated. When Jin Yingdou, the Supervisor of the County of Xiajin County, learned that "the dragon's body is not safe", he offered the local specialty food "Zhenzhen Qi" with trepidation. This pearl chess is a specialty of Xiajin. It is as white as rice, and as beautiful as phoenix eyes. It is truly as white as jade shavings, sparkling with pearls. After Emperor Qianlong ate it, his appetite greatly increased. So he summoned Jin Yingdou, the Supervisor of the County of Xiajin, to inquire about the situation of Pearl Chess in detail, and "bestowed a poem fan by the emperor". (Refer to Volume 1 of the "Xiajin County Annals" by Emperor Qianlong) Jin Yingdou, grateful for the grace of heaven, detailed the production and cooking techniques of pearl chess and presented them to the emperor. After reading it, Emperor Qianlong was amazed and delighted with the "Dragon Face". He then took a vermilion pen and changed the "Qi" character and "Mu" side of the "Pearl Chess" to "Wang" side, and crowned it with the radical of "Three Kings", giving it the name "Pearl Qi".
